The story of the restaurant at Villa Marie began a long time before Maisons et Hotels Sibuet acquired the establishment. François Plantation is a restaurant that everyone on the island knows well, and restoring this legendary institution to its former glory was an obvious choice. Today the cuisine is crafted by chef Emmanuel Motte, and explores the classics of French gastronomy while also revisiting local dishes.
Lunch can be enjoyed by the pool on the comfortable seats in the garden alcoves, and includes langouste club-sandwich and colourful vegetable medleys to be shared. While perusing the menu, you’ll be spoiled for choice between the homemade foie gras, roast Bluefin tuna with delicate spices, langoustes flambéed with the vintage rum, and bouillabaisse revisited by the chef using fish from the Caribbean Sea.
Emmanuel Motte’s cuisine is elegant and sophisticated, packed with flavor and fragrance. A winning combination! After dinner, guests can continue their evening in the hotel bar, where the menu of vintage rums and cognacs is enough to satisfy the most demanding connoisseurs of sophisticated digestifs.
